Pink Salsa

Salsa, all day every day. A dip for your chips, a filling for your tacos, a dollop for your eggs, a dressing for your salad… ohh, the possibilities! Homemade salsa is probably one of the easiest things you could ever make and probably one of the hardest things to mess up.

Now, moving onto this simple and fresh salsa recipe, shall we?

Ingredients

  • 1 medium tomato on the vine (… and then take it off the vine)
  • 4-5 medium/small tomatillos
  • 1/2 medium cucumber
  • 1 clove garlic
  • 1/4 medium red onion
  • Small handful of fresh cilantro
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • Generous amount of salt, to taste

Directions

  1. Place all ingredients in the food processor and pulse until you reach the desired consistency.
