Grandma’s Seven Minute Frosting

If you like any type of meringue desserts, if you like marshmallow fluff, or if you have any sweet tooth at all, you will LOVE this frosting. It’s light, fluffy, and just AMAZING.

Though I wish I could, I can’t take credit for this delicious frosting. This is one of my grandma’s recipes. It’s a good feeling when you find ways to stay connected to those you’ve lost. Even with something as small as a recipe, it’s truly special when you find a new way to share a piece of those you love.

I recently paired this frosting with my pumpkin spice cupcakes, and let me just say it was a match made in heaven!

Fluffy seven minute frosting

Grandma’s Seven Minute Frosting

Makes enough frosting for 12-18 cupcakes.

Ingredients

  • 2 egg whites
  • 1 1/2 cups granulated sugar
  • 1/4 tsp cream of tartar
  • 1/3 cup water
  • 1/2 tsp vanilla extract

Instructions

  • Using a double boiler technique: fill a medium size pot about halfway up with water and bring to a medium boil.
  • Fit a metal or glass bowl over top of the pan, then add all ingredients to the bowl, except the vanilla.
  • Using one hand, hold the bowl in place with an oven mitt. With your other hand, use your hand mixer to beat the mixture. Start on a low speed, and slowly increase to a high speed.
  • Continue to beat the mixture until it holds its shape—about 5-7 minutes.
  • Remove from heat and fold in vanilla extract.
  • Frost cupcakes or cake with an offset spatula or using a piping bag. Do not store in fridge or freezer.
